If I buy an economy fare and upgrade to business with points, would I still earn points and status on the original fare?

Make sure you're aware of the ticket classes and only purchase an "upgradeable" economy ticket. Usually only the full economy tickets are upgradeable.

Yes
I think my work might get saver fares not the sale fares. So it might work.
My own office just has a policy to take the cheapest ticket from a number of selected carriers. That includes discount economy which isn't eligible for upgrades.

FYI. You cannot upgrade on a sale fare unless you have lounge access and you plead with the lovely staff at the counter to use your points. Although not guaranteed even if you a lounge member. If you want to upgrade avoid sale fares.
As noted already must be saver fares or above.

Unless you have qantas status (gold or higher) it’s unlikely you’ll get an international business class upgrade as they’re highly coveted and awarded by status pecking order. Especially on popular routes like the US and Europe.
