We are 3~4 family friends (from Sydney) looking for ~3 days holiday options in January. We have couple of new borns and kids under 5yrs with us so something probably a relaxing or sight seeing type locations will do.

I second Canberra.
Much cheaper if you can wait till late in the month or February.
For a suggestion, one of the nicest holidays I took with young kids was at Mystery Bay cottages far down south. Half the pleasure was driving through beautiful scenery, stopping at sleepy little towns, and then staying somewhere quiet and out of the way for a couple of nights.
If a long drive doesn't appeal, the places north on macquarie lakes are good value. Take a look on Stayz or airbnb and get a house rather than a hotel and you will have better facilities for little kids who need more homely accommodation. Nothing better than playing in the sand with little kids. If the older ones can walk with you looking in rock pools, all the better. Keep it simple.
I'm taking my kids (9-16) to the beach for the next two weeks, and I will be a terrible parent as I enforce no TV if the sun is out and no phones/ipads.
Maybe the radio for the cricket for a couple of days, but bikes and boogie boards and sunscreen are the main entertainments I am bringing (and beer and books for me). We may sail a catamaran if it gets hectic, and after a week, head into town and watch a band on a Sunday afternoon at a pub.I get a bit choked up about how good the Australian lifestyle can be when you have no deadlines. Every town in Australia has plenty of free or dirt cheap entertainment, food is peanuts if you have time to make a nice dinner, or even a sausage and sauce on a slice of bread, beautiful coastline is close, amazing bush is at hand. We do ourselves in with our constant pressure to do more and buy more. Sometimes on this site I write about how we need to look after pensioners or other folk without the income of a regular job, but then I realise I work hard all year for a few weeks doing pretty much what they do. They should be writing to help me out!
I have a mate at work who is 58, and has his head screwed on right. He has raised his kids, paid off his house and is 12 months away from quitting and spending his days fishing on the south coast.He earns lots of money, but has kept his head, drives a commodore not a BMW, lives in the suburbs, not on the water, has had an interesting career, but not a CEO. He will retire to a great life of no money worries, but not skiing in Aspen or lunch in Naples, but is no poorer for it. I wish more of us recognised how good it is to unwind.

Personally I don't find sunscreen that entertaining. ;)

Are you happy flying somewhere? Tasmania can be very relaxing and might give you a break from the stinking hot weather.
Jenolan Caves is cool, probably Hyams beach is a good idea. Canberra might get boring.
There's enough to see to occupy a family for 3 days. Any longer you might start running out of things and get bored though
