I’m looking at getting my nieces a fun tech/science gift each for Xmas. Yeah I’m that kind of uncle who wants to buy educationional gifts instead of rubbish that’ll break in 3 weeks. Any suggestions from anyone would be great.

Ebay 'arduino pro mini' or other small ones in the $2 range. 328 chip is the better of the types.
One step up is probably an UNO R3 clone for $5 ish.
Sainsmart seem to be on the better end of the clones.
WS2812 LED rings seem to be about $2.
Launchpads were available at $4.30 officially shipped at launch back when the dollar was above parity.
Depending on what you have available, you might need an FTDI FT232RL serial-usb board for a couple of bucks for the cheapest boards mentioned.

Parents/other adult carers can enjoy together and likely be educated too.
Get them a book on kids science experiments, a couple of smocks and some little eye protector glasses and promise them you will go spend a few weeks going through the book with them. Make sure you include some mentos and coco cola tricks. Guaranteed to amuse any child.

I always like to browse through the Amazon.com STEM toys for ideas and then buy from wherever.
If they are truly tech savvy, arduino or Texas Instruments Launchpads are pretty cool and can be had for $2 ish bucks off ebay or more, officially. For a further $2-8, the ring RGB LED arrays are actually heaps of fun. Might be a little work on your part to help out, but for $5-10 there is a fair bit of education possible.
