The fact you're considering purchasing an iPhone X means you don't really worry about value for money.

It could be for someone else who has said they want this no matter what.. in which case OP is definitely being a typical ozbargainer and trying to save 2% which on an expensive item is not a small amount.
It might be worth purchasing through Amex as they have the smash screen (up to $500) insurance
AFAIK there's no AMEX surcharge at the apple store
Go to the supermarket and buy gift cards for one of the retailers (JB Hifi) that sells iPhones, or Harvey Norman. Loads of ways to do it.

True, but OP has indicated that insurance is their priority.
Up to them to decide if they wanna prioritise earning AMEX points over insurance. IMO the insurance is probably worth it.

PayPal accept Amex so any merchant accept PayPal without surcharge (Ebay) or does it have to be a direct transaction with the merchant?
Apple store dose not charge for surcharge fees. Also Paying through Ebay Paypal can be avoid the surcharges. Narvey norman & the good guys seen accept AMEX, but I don't know do they have surcharge or not

AMEX essential credit card has $0 annual fee and comes with free smartphone screen insurance

It is covered for as long as your AMEX card is active. Claim limit is $500 per claim and max of 2 claims per year. It’s perfect for the iPhone X
