But when activating the optus sim, it asks you to pay for a recharge (min $10). Is there any way to bypass this?

yes. You can go in store and bow for one hour. the manager will then give you $10 to stop all the fuss. Win Win

Minimum $10 is design to stop ppl from using sim for just porting :)
Double check that they aren't just asking you to choose a prepaid plan and maybe you don't actually have to recharge right then?
Also, a better way to do this is to use a Telstra SIM.

The other benefit is that Optus to Optus ports are done manually and can take days. This includes ports between Optus and Optus MVNOs like Amaysim.
Ports between Optus and Telstra/Vodafone are automated and much faster. In my experience porting Amaysim to Telstra and vice versa takes like 10 minutes.
Note that even though the ports happen that quickly, I would not recommend porting out and back in within the same day in case it confuses Amaysim's systems and they don't treat you as new customer. I usually leave a full 24 hours between porting out and back, e.g. port out Monday arvo, port back in Wednesday morning.
