In Sydney, I am wondering where is the best place to exchange around $2,000 AUD to USD hard currency ? The aim is obviously to minimise commissions / fees / spreads and get the best possible price.
Anyone have any tips?

Honestly neither banks nor money changers in Australia have good rates.
Bring your Citibank debit card and withdraw money from Citi ATM there.
Citibank was the best option for me too. That was around 5 years ago & i got around $1.05 to each AUD
OP might not be going to USA in which case Citibank option is useless.
Why do you want cash? Get a Citibank account and just use card…
Maybe he wants the money at the current rate, not at the potentially lower rate when it comes time to make the swap in the US.
I'd rather the security of being able to cancel my card and not have any money stolen if I lost my wallet than saving a few bucks on exchange and potentially loosing several hundred.

Have used https://thecurrencyexchange.com.au and had the best rates I could find. Might not be convenient to you though.
KVB Kunlun in the CBD, always the best option for cash.
AMEX has currency conversion that you can pick up at Australia Post
