Have Foxtel set up in the lounge, could run an HDMI extension that would be about 15-20m. Wondering before I purchase if it would work? Would I need to buy a high quality cable?

Have you tried a wireless HDMI? Unbox Therapy reviewed it.
Do you have home internet?
If so consider running the Foxtel Go app through a HDMI Windows 10 Stick PC,
or even consider ditching the box and going with Foxtel Now and a chromecast stick
Foxtel Go app is a good option but you loose the ability to record /rewind.
I agree but if you use the foxtel go app you can keep the IQ satellite box in the lounge.
The Stick PC will allow similar to chromecast (although at 4 times the cost of a chromecast).
Really foxtel dropped the ball by allowing "foxtel now" to have chromecast support and holding it back from "satellite" foxtel customers.
I have a laptop plugged into the kitchen to via HDMI. Running Foxtel go over wifi. Works well

You would also need a IR repeater to be able to use the remote…..
AV sender with IR repeater may be a better option..

i have done this recently
i have a hdmi splitter connected to foxtel 1q3 box
a 2 meter hdmi cord going to a wall base plate which goes under the house and behind the baseplate i have a 10 meter hdmi cord
running to the bedroom then i have the same set up in the bedroom.
in the bedroom i have a ir sender connected to the main tv for remote signal i have had this for about 6 months with no issues at all.
before that i had the ir sender but the quality and signal was not 100% so thats why i went down the hdmi path.
i should mention i have just ordered this ir hdmi extender for the remote
to hope cut out the power useage on the ir box which is powered on 24/7

Check out HDBitT receivers. Sounds like Shenzhen factory voodoo, but they work great! Just runs over a normal Cat5E/Cat6, and transmits the HDMI signal + IR remote. We use them at work for pushing Foxtel around.

We also bought a set of these (again, not from the linked seller) http://www.ebay.com.au/itm/HDbitT-HDMI-Extender-with-HDMI-Lo… which is similar, but has an HDMI output on the transmitter for connecting to a local display. We had to plug things in in a specific order to make HDCP happy, but that might've been the weird HDMI source device we were using :)

I use a Belkin screencast av4 to send it all wirelessly. Not sure what ill do when it dies, wireless is a huge benefit when renting.

You would need an 'Amplified' HDMI Cable — The reason why you would need this, is because the standard HDMI cables over 15m will give you a 'Static' picture and fuzziness which is a no-go for most people.
