If I move overseas with a one way flight, am I still able to claim the TRS refund at the airport when departing Australia? Or do you need to show them a return ticket?

Yes.
I did this when I moved overseas. I asked out of curiosity what the time period is before I can bring the item back into the country as I was planning to come back in a few months for a Christmas visit to the family and they said it's fine.
Sure. You get the TRS refund anyway if eligible, like tourists. It's only if you bring the goods back you may be charged duty if over the concession.
True, you have the $900 duty free allowance, but if cost is over $900 they will allow for depreciation too.
