So I saw that Coles is offering 500 flybuys points if you buy TipTop Vanilla loaf. I went to buy some and I saw they are at 50% off.

You aren't missing anything, however people receive different offers for different products - if you are talking about the offers today I didn't get that product but got Devondale Butter and Maple Syrup.
Sometimes you get lucky where the item is on special and the net price is very low or even free/in profit. The offers are also often for 1 or 2 weeks so the price would revert to full price on Wednesday (next catalogue period) and the offer wouldn't be as good, or if the item is full price now you can wait until Wednesday or the Wednesday after and see if goes on special.
