When I was at uni I bought a kapok mattress from a second hand shop; thought I would use it as a beanbag type thing. My dad went ballistic but my mum was ecstatic. She took it off me and turned it into a whole bunch of pillows.

I have a Dentons and could not be happier. Check out their website to find the one that suits the way you sleep. Personally, I use the Therapeutic Medi Rest.
You may initially balk at the price, however, they last for years. Also, note that they are often on sale at Myer.

If you are in Melbourne then Tontine have an outlet place. They have a big range and the pillows are pretty good.

I'm super fussy with my pillows, so between the master bed, spare pillows on that, and guest bed, we have quite a pillow menu (like one of them there fancy hotels)
I have a Target Tatalay Latex Contour pillow which is good because i like the support - $50
I have also used a latex pincore from Spotlight, very very comfy but can tend to sag a bit after a while - $25 on sale
I also tried a kind of downy pillow but much more supportive from Dunlop Theropillow. Also very comfy but can sag - $10 from factory seconds store
Avoid memory foam, it sucks. Its way too firm. I find it beautiful and soft at first, but then it compacts and its like laying on a brick
Had mine for years, best pillow ever, even take it into hospital on my regular stays
