Newb at this, so your advice appreciated.
My wife and I are going to Hong Kong in about a month for 8 days. When we're there we'd like to keep getting the occasional call from Australia to run our businesses through our mobile phones (with Aldi).
My wife is probably mostly okay as she has a VoIP service. I am only likely to get one or two mobile calls (which I am fine if they go to voicemail), but I'd also like to return calls especially new enquiries.
This is my guess of what we should do:
1) activate mobile roaming in advance of going
2) when leaving Aus turn off mobile data
3) buy SIMs in Hong Kong so we can nativate, use websites etc
4) slip in the Aldi SIMs just to do business every couple of days, then revert to the HK SIMs
Does this sound about right? Or any improvements? Any suggestions of a HK mobile provider which might work for us?

Sounds like a good plan. You will need to know how to change the APN settings to get on the local cellular, but you probably had to do that to make ALDI work.
I bought a SIM at the airport, took 3 mins and came with 2 or 3Gb for around $20.
I have found roaming pretty hit and miss with Vaya, Telechoice and Amaysim, so I would be skeptical about ALDI having a smooth system in place. It is really hard to sort out roaming issues from abroad. Telstra and Voda work well, to the extent you can just give them a bell at the airport and they will turn it on.
I would definitely have a back up plan. Probably the easiest would be to find out how to access your voicemail from a landline using a PIN/password. Then if you have issues with roaming you can just use your wife's VOIP client to call the Australian voicemail number to check it, and return any messages.
Bugger, just checked ALDI's website and it says: You cannot currently access your ALDImobile voicemail from another phone.
