      You don't have to be on the front page for it to be a good bargain, grass fed and quality meat like this still isn't mainstream as most people are more worried about cheap eneloops than looking after their health and wellbeing.

      Anything under $30kg for Sirloin is cheap for good quality grass fed it's a very good deal.

        Sirloin is American for eye fillet ….What cuts are we talking here porterhouse scotch or eye fillet and if we talk tbone is it with eyefillet.

          $30 kg for centre cut eye fillet not butt or tail and I'm in .

          Coles is $40 for eye fillet and I need to forage through the packs so I don't get tail or butt pieces.

          In the US Sirloin is probably close to scotch fillet where as in the UK sirloin is more like porterhouse. Picture looks like it is porterhouse like the seller mentions

    Hey OP.Is the image indicative of the thickness of the steaks? I generally find that the 250g porterhouse steaks are thinner cut than the image? (supermarket thickness)
    I'm looking for some thicker cuts. The ones in the image seem about right but I feel they wont be 250g.

    Do you supply a dry aged long, and how long is your meat hung before processing?

      Beef is hung for 14-21 days, however we don't do dry aged I'm sorry!

      @snagseb +1 on the American low & slow cuts. I'd be interested in a deal for some choice cuts for the smoker. My local Costco do meaty SLC pork ribs @ $18.99kg from SunPork and a 10kg brisket for $80, however a 10kg brisket is a bit too much!

        Found the pork ribs at Costco fairly decent! What smoker you got?

        Also if you live near an Asian butcher - most of the time their pork ribs are spot on

        • [@Filthy-Frankfurt] thanks for the tip with the Asian butchers. I live at the Sunny Coast, so mostly traditional butchers. However I travel to Brisbane weekly and often grab something on the way home. Will check out some of the Asian butchers.

          As far as smokers go, I've got an offset smoker and a pellet smoker. I love the using the wood fire, but often get lazy and use the pellet smoker!

          What gear are you packing? Any other tips on meat buying?

          Most Asian butchers only sell pork from female pigs. Its less gamy and has smaller bones. ;)

        • @x853: Take the fat off and it will be excellent. Invest in a vacuum sealer if you don't have one, doing them in zip lock bags wasn't nearly as good in my experience.

    Just a small thing, a little less air in the vac packing would be appreciated. I put it straight in the sous vide and the last few chickens needed a lot of weighing down.

      What difference do you expect by using fructose and glucose to cure instead of sucrose? If you think it's going to be more healthy, I'm afraid you'll be disappointed.

      All meat is cryovaced for maximum tenderness and flavour and depending on product can last up to 4 weeks in the fridge. Each delivery will be ice packed and sealed in a recycled polystyrene box to ensure maximum chillness upon receipt. All items are labelled with a used by date.

      In saying this, you can certainly pick up from the Sutherland Markets - please just include in your notes :)
