Should I go for more amperes? more than 2.1 or perhaps 3.1? Does it depend on the car or totally on the phone?

More amps means your phone charges faster, especially if the device is an iPad/Tablet or phone is running apps using high amount of power, e.g. GPS
For the 3.1A ones, it usually means a 1A socket and a 2.1A socket. Those are fine if you want to charge one device.
For quick charge, you want an Android phone that supports QC2.0 or QC3.0 and a charger that supports those charging protocols. You're probably best to post the phone and model. Some phones have quick charge capability. e.g. My phone has Qualcomm Quickcharge 2.0 capability. Using the factory charger, with WiFi hotspot turned on, the phone will go completely flat even with the charger plugged in. But using a Tronsmart Quickcharge 2.0 charger, it not only runs the phone, but charges it to full capacity even with WiFi hotspot activated.
Anyway, "Clear" frequently posts deals for Tronsmart chargers - both 240V and 12V. They're quite good. I wired a 12V car one up backwards the other day, using a computer power supply to power it (I wasn't paying attention) for a good 20 seconds. It started smoking, and the plastic started to soften. I unplugged it, waited a couple of minutes to cool down, tested it - and it was still working fine. Not many devices could handle that kind of treatment.

2amp will be fine. I've had good luck with those $5 supercheap auto ones. They charge the phone fairly quickly.
