What is the best way to find a deal? We are looking to book two or three weeks in August but flexible with exact dates. As this is peak Summer season for Europe we are worried the airfares are going to kill us.

We would prefer only one stopover (usually Dubai it seems) unless two stopovers saves crazy amounts like $500+

Does it have to be August? Spain can be pretty hot in August, and the crowds are crazy, lots of Americans, Japanese and northern Europeans.
Unfortunately it does, we've got a wedding to attend. I know, Europe in Summer is an OzBargainers nightmare…
These days you can often get affordable prices in peak season if you're willing to travel for over 30 hours in at least one direction on a Chinese airline (sometimes with a changeover to KLM in Amsterdam).
Otherwise the cheapest one-stop airline to Europe these days (outside specials) is often Qatar.
In addition to altomic's suggestions you can check out http://matrix.itasoftware.com/, which you can't order from but at least it gives you live prices you can give to a travel agent, punch into Skyscanner or even https://bookwithmatrix.com/. It's useless for tightasses doing short trips since it doesn't include low cost carriers.
Perhaps try a multi-city trip eg Australia-BCN-KUL and get a cheap KUL-SYD ticket added (and use the stopover in KL for one of their nice&cheap 5 star hotels or fly through to one of the beautiful islands if that's your thing). Qatar Air will probably show up as the cheapest.
Island stopover in KL is a great idea, I'll look into that cheers.
