I've gotten the impression I can't spread it over several small shops, e.g. taking separate discounts of $10, $20 and $20. I can only use the discount for a shop over $50.
Is that right?

Yes, I think the discount has to be used in one shop. When you activate the offer, you can choose between the $50 discount and 10000 points (equivalent to $50). Best to choose the points, that way you can split the points over several shopping trips, if need be.
$50 off is for lazy people who do not log in their account to do the points to dollars conversion.Otherwise,10k pts is always better than $50 off.
If you have chosen the discount you have to use it in one transaction over $50.
You won't earn any new points on the part of the transaction that was discounted.
Remember you only have about 4 weeks (please check the email) to use this discount from the day it is credited to your flybuys membership.
You can't take it in lots of $10 or $20. If you want to do this you need to select the 10,000 points and then convert them to flybuys dollars. Flybuys dollars are more flexible as they are a payment method. You can use as much or as little as you want in each transaction. You can qualify for new targeted offers on the transaction as well. The points are credited within 2 days of your final qualifying transaction so you don't have to wait a long time for them like you used to.
Correct, step 2 of the 4 steps in the email states
"Spend $x or more in one transaction, in store or online at Coles, each week for 4 weeks."
