The thing is, the Samsung 256 GB EVO+ will not be able to be used in an S7 past 200 GB. If they've changed that, let me know.
What does U1 and U3 on microsd cards mean?
The question for most s7 users is:
Do I want a microSD card capable of high quality video or a cheaper card that isn't over 200GB?
From my understanding the s7 only officially supports up to 200gb. Unofficially it should work with 256gb and up.
I'll be getting a Samsung Evo+ to test on my s7e so can report back to confirm once it arrives.

Great card, have it permanently stationed in my Surface Pro 4 for a handy 200 gig.
Are you able to install programs to the SD on SP4? If you can anyone tell me if that is a good or bad idea (eg for speed reasons)
Since the latest update (or the one before?), you can but you don't want to. I just use mine for storage.

The cards GoPro recommend are faster. Class 10 is the minimum speed. It will work for photos and posibly 1080p video at standard frame rates but it will not likely work with 2k, 4k or possibly even 1080p @ 60fps.
I am looking for one for the same thing. UHS 1 or UHS 3 is required according to the GoPro website here
UHS 1 is capable of up to 1080p according to this site while UHS 3 is required to handle 2k and 4k video.

U3 class sd cards include, Samsung Pro +, Sandisk Pixtor, Sandisk Extreme, Sandisk Extreme Pro, Lexar 633X(some), Lexar 1000X, Lexar 1800X.
Most of these GoPro mention as 'officially' compatible here in various capacities. Lexar 1800x isn't mentioned and the Samsung Pro is also in this list.
Personally I just set up an alert here for sd deals and will wait until something suitable pops up or I stumble across a good deal myself.

I tried out a class 10 card on the weekend and it successfully recorded at 4k30fps on the hero5. With that said I'm probably going to purchase a U3 card just to be safe (not that much more expensive). It's also worth noting that according the documentation for the GoPro it only supports a maximum of 128gb cards.

Does a 200gb wireless stick work on a phone or tablet whose capacity will not take one with an otg cable? ie: can I use this on any smartphone or tablet - whether they would not ordinarily take one inserted or with a cable? (if yes, this has solved a lot of problems for me)

I'm not sure having huge micro SD cards is a good thing. If it fails then it's a larger loss. I've had a bad experience with SanDisk in the past but hopefully they're better now.
You can always backup important documents and photos to a cloud service. Music and movies (which you'd most likely use all that storage for) could easily be backed up to a shared network drive.
that's why I only use 64mb cards.
It's a bitch listening to a full album or trying to shoot more than 3 frames, but dat failure protection doe.
Same with SSD and HDD.
The only safeguard against data loss is to have more than one copy of all your critical data.
