didgeridoo - uniquely Australian, can be ornamental, won't take up much space in their home, fairly robust for transport - just bubble wrap it well, and they'll have at least 2 minutes of good fun trying to get a sound out of it

Uggs - They won't care now that they're Aussie made, considering the fashion trend that went worldwide a few years ago
I'd say local wine if they have the room in their carry-on (and haven't bought any for themselves yet)
Otherwise local souvenirs are generally of opposite ends of the spectrum (imo) - either cheap tacky generic things, or jewellery with local pearls or gems.
