I have a nice mechanical wired keyboard and trackball mouse that I like, but it would be useful sometimes if they were wireless. Is there an adapter or similar that allows these sort of devices to connect via bluetooth or wifi?
I don't want to replace these with bluetooth native devices.

You would need some kind of MCU (micro-controller unit) with a custom software that can take keyboard and mouse input from USB, wire it up to an MCU board, wire up a BT transmitter, write a code so that it can translate your keypresses into something your computer's bluetooth stack can understand, and then write drivers for your Windows OS. Also, power the mouse/KB using a battery.
edit: Looks like a product like this exists. It also has a built in li-ion battery that provides juice to the connected peripheral.

bluetooth keyboard hub? bluetooth dock?I've always had disappointing results with cheaper dedicated Bluetooth keyboard or mouse (lag, skipping, slow to wake). A cheap device by a different manufacturer will probably be even worse. You'll get a much better result from the manufacturer's wireless tech.
not really. there are wireless hubs like this one from amazon so you'd still have a wire or sorts
also the mechanical keyboard and trackball mouse would need some sort of additional voltage (especially mouse as it is more "mechanical").
