You may have missed the press release, but Spotlight have recently committed to an expanded Customer Relaxation Area Program (CRAP) where users can fully experience their new purchases in a realistic environment.
Many hours of smoko breaks have been used in brainstorming this new employee initiated program with the CRAP acronym evolving out of the overwhelming satisfaction level experienced by employees on the store floor.
While details of the CRAP you will find in Spotlight varies from store to store, it is certainly hard to miss. To address your particular concern, you may avail yourself of Spotlight's luxurious concrete flooring while lying on your back staring at the seizure-inducing fluorescent lighting.
While this may not entirely mimic your own bedroom environment, you will certainly learn to appreciate the full CRAP experience while turning this way and that on your new plastic-encased pillow purchase.

There are actually pillows that have gel pads in them now so they don't warm up at all, saves having to constantly flip them to get the cool side. If you just google Cool Top Pillow you should find a bunch, or maybe they even just make an insert for regular pillows to add into your preferred pillow.

Unfortunately it doesn't look like they do.
If there's a tester pillow sitting on top of the stock then by all means do whatever you want to it. Just keep in mind previous customers probably also did whatever they wanted to it so best not push the boat out too far.
If there isn't a tester pillow and everything is sealed in original packaging I wouldn't open them up (imagine you're the next paying customer and found out you're really buying an ex-demo tester pillow). Check with staff if they have a tester or if they are willing to open one up for you to trial.
A cold pillow requirement is a new one for me, I've always used the Ikea guide here or alternatively here which suggests pillow types based on the way you sleep.

I keep trying to find the pillow I have again, but I can find it nowhere. I rue the day it must be replaced, I love it dearly.

That will be the one that's most comfortable for you - depending on if you sleep on side, back, tummy, have broad/narrow shoulders, a long/short neck, soft/hard mattress. ;)
Got a good option for you:
I find memory foam in general is too firm for me. It feels great at first but you realise you are being supported just a bit TOO well
I went with this Latex 'pincore' (some sort of heavy metal subgenre…?) and its fantastic. Really soft but supportive. I do however find it can lose some of its softness and bed down a little bit after a while so I ended up buying 2 last time they were on sale and I switch them around every week.

For someone looking to replace Kmart pillows, what is a good entry level pillow to buy?

That one looked appealing, is it soft or firm. I like mine firm as hell. My current latex one is awesome in a pillow fight, its like swinging concrete.
Stupid ikea pillows don't fit in the standard pillow cases!!
I discovered similar a few weeks back with new latex pillow that was great straight out of packet but became too cramped and crap in a 'standard' pillowcase. In a queen size case though, it's soft and bouncey again.

This may sound stupid, but I have a question regarding pillow buying etiquette.
Is it okay to try out pillows in store? If so, how do you try the pillows out? To my knowledge, there's no beds at Spotlight so where do you place the pillows?
My pillows are getting old and some of the ones I've bought online aren't comfortable at all. So I really want to try a pillow out physically before buying a new one. But I don't want to look like an idiot in the store.
Also I like pillows that are cold and don't tend to warm up so much. What kind of pillow do I look for?
