Can't help you with the device, but if you're heading well outside major cities and population centres, as much as I dislike their pricing Telstra does have by far the best coverage.

What is your budget, and what is the phone going to be used for (just calls and texts or data, internet etc)?
Where are you planning to travel?
You can try and find a phone with an RF port so you can attach an external antenna but I gather they are hard to find these days. Telstra has the Tough Max but it's expensive and I've seen a lot of bad reviews.

You need the Telstra network (note, not a reseller except Boost).
If you are going to remote areas you might want to post somewhere like myswag forums where you can get first hand recommendations.
You don't mention price, or exactly where you plan on going…
Australia is huge and poorly served for contact over large expanses in the farther flung places - if you decide to get really adventurous and don't wish to chance things.

More importantly the choice of network. Telstra has the best coverage. Get a telstra blue tick phone for rural coverage. If you are going to isolated areas you need a satellite phone
