There's the Gorilla glass screen that protects the LCD display, the digitizer and the LCD display itself.
So three components actually make up what you'd call the "screen".
Obviously, a kit may include all three parts, (can be cost prohibitive) or you might only buy just one part (less expensive). If your screen is cracked but you still get an image and the touch function works, that might mean you have a working OLED panel but simply just a cracked Gorilla glass panel. But if it's completely FUBAR then you gotta replace the whole lot.
Be careful of inferior counterfeit parts though. It is very easy to buy a display that is clearly not Samsung.
I would try a more reputable place to buy parts e.g http://www.etradesupply.com/ is apparently a reputable place from what I've read.
I recently found a local option for electronic parts for phones/tablets (JSTech). The price on their website seems to be a bit higher then some other places (you get free tools when purchasing certain parts though) but when I went in to their store/warehouse I got a pretty steep discount which made it pretty competitive against all but the most heavy discounters online. As with all other electronics it pays to look at a teardown to see how the device was constructed ("teardown samsung galaxy s5" into any decent search engine should give you decent results whether just pictures, videos, or description…).

Have had experience with s2 and s4, s5 probably the same. Can get glass only from ebay (~$10) or glass + lcd ($100+).
Glass only very tricky as it's easy to break the LCD in replacing it (requires melting the glue holding the glass to the LCD.)
Glass + LCD will take a good hour the first time you do it, but I again wouldn't recommend unless you've got a bit of a knack for this sort of thing as things like antenna cables are easily killed.
Also I've found replacement screens don't last like the original, sometimes cracking for ridiculously small bumps. Last Glass + LCD replacement was also non-reactive around back button area driving me crazy, but unfortunately screen cracked before I could send it back. (No, it was not poorly installed.)
