I want to dabble in a bit of iPhone programming but it seem I need to mac to do so. As far as I can tell any mac with an x86 processor will do. I'm looking to spend as little as possible (less than $500). Things that take up less space are better too.

17" iMacs go for that sort of price. Core Duo versions especially.
I've seen a Core2 model at $500 recently in Adelaide.Don't necessarily have to buy a Mac machine to run mac OS. Try this:

Get a 300$ netbook. Pipe a monitor/mouse/keyboard and you're done.
Probably a 2nd hand mac mini with an intel processor on Ebay. If you don't mind BYODKM.
