About this product :

Bomba rice (Oryza sativa L.) is the most recognised and sought after variety of paella rice in the world, and the Ebro Delta in the Catalonia region of Spain is renowned by chefs worldwide for its Bomba rice.

The Illa de Riu bomba rice is packaged in 1 kilo paper bags. Inside each paper outer bag, the rice is sealed inside a plastic inner bag ensuring quality and protection from moisture.

Generally available only in specialist delicatessens and grocers, it is almost impossible to buy authentic bomba rice in Woolworths or Coles.

Characterised by low yields and resource intensive cultivation, bomba rice has a long maturation resulting in a highly dehydrated grain.

Its high cost of production and limited supply means the bomba strain of rice commands a premium over other rice varieties, and bomba has unique properties that make it perfect for paella and many other types of Spanish and Mediterranean cooking.

  • Bomba rice expands horizontally not lengthways
  • Bomba rice is less starchy than arborio, resulting in grain separation which means it doesn't become sticky or creamy when cooking
  • Bomba's high amylose content prevents it sticking to cookware
  • Bomba rice absorbs up to 3 times its own weight in broth (compared to other varieties of rice which absorb around 2x)

Short grain rice has less of a rice flavour compared to long grain rice (eg Basmati), but instead absorbs all the wonderful flavours from the recipe when cooking, making it a great rice for stock absorbtion and perfect for cooking paella.

Your rule of thumb when cooking paella is 80-100g of rice per person, and with bomba rice allow 3 ladles of liquid for every ladle of rice.

    Why is this a bargain? Can't you use Arborio rice which costs about $5 for 2kg ?

      Hi JV - bomba is a very specific rice variety and is used in paella. It is an expensive variety of rice to buy.

      Arborio is starchy and becomes creamy when it cooks, so it is great for risotto. Paella should never be creamy, the grains should have good separation whilst maintaining high absorbtion. Bomba is the best rice for this.

          Maybe…. it says it's resource intensive to grow, presume that also means harvest and market.

          Surprised they don't put a vintage on it and you just buy it in top years.

  • Your regular prices seem well off the pace, so 40% off just brings it back to what you'd pay at any deli that stocks it. Our local deli sells 1kg of Arroz Bomba rice for $12.95 - their regular price. A quick Google suggests that that's about right. Maybe the free shipping has some value to those that can't get it locally. Unless this particular brand is something spectacular? Doubt it.

      Thanks for your comment. $12.95 per kilo is a good price for Arroz Bomba. You would normally expect to pay that for 500g. You should be able to buy normal Spanish Calasparra rice for about $10-$12 per kilo, but bomba is normally about 60% premium on standard Spanish shortgrain rice.

      We have a lot of customers in regional areas where there is not access to good deli's, so the free shipping definitely adds value.

      Illa de Riu rice is cultivated in the Ebro delta region of Spain, which is a heritage listed wetland. The company produces its own seeds each year, and the rice is highly regarded for its consistency. Its arguably a better rice than the bomba rice of Calasparra, but the name is less well known so the rice is generally not as popular.
