A couple of friends of mine are going over to Canada for a few weeks and have asked what I might want but have seriously no ideas.
The dollar is almost at parity and food, tech and fashion are all sounding good. Any recommendations?

Go eat some Alaskan King Crab. It is much cheaper than in Australia and many times better because it is "FRESH!".
You are going to find that much of the products are similar to Australia, so you'll probably find yourself spending more money on the tourism aspects rather than products (souvenirs excepted).
However, their malls are huge! HUGE!
Try get a Northern Gifts plushie, they are great collectibles. (I have the Arctic Wolf)
Which city do you plan on visiting?
Oh, and generally the shoes that are available in winter are enclosed (more likely to be waterproof) rather than the open air ones usually found in Australia. I found the a similar model of my Saucony shoes (same color and all) but it was the enclosed one, and was ready for playing in the snowfields. However, they might not be so comfortable when you bring them back to use them in Australia's 40+ degree heat. They are different in that the area around the toes is not breathable.
If you are on the border with USA, you should try go across and have some fun as well.

Fashion? Definately a full length indian head dress, impressive in the right setting. I did bring one back (from Alberta) for a family member.

A big tip is to research which state has the cheapest GST/sales tax. Each Canadian state charges a different rate of sales tax. It could save you another 5%.

I wouldn't bother with electronics as those are much cheaper in the states.
Food:
* maple syrup (look for it in a can/tin so it's easier to transport and be wary of maple-flavoured syrup masquerading as the real thing)
* maple fudge
* maple candy
* chips/crisps (ketchup, dill pickle, jalapeno, mesquite BBQ, and all-dressed flavours)
* root beer
* Thrills gum (It tastes like soap, so it's more of a novelty thing. As a Canadian I couldn't tell you who actually buys the stuff. Might be a regional thing? In any case it would be hilarious if you have kids.)
* Hawkins Cheezies
* Coffee Crisp chocolate bar
* Macintosh's Toffee
* wild rice (also comes cooked in a can/tin so it might be more border security friendly?)
* alcohol
Clothing:
* Roots apparel
* insulated plaid shirt

Other:
* hockey or football-related stuff
* Hudson's Bay blanket (kind of pricey, but very iconic)
* native art of some kind (e.g. painting, inukshuk, dreamcatcher - can have feathers so might get yanked by border security?)
