I would like to upgrade my stock Mitsubishi car radio to new JVC model.
I opened up the car audio and noticed the new car audio has 'too many' extra wires and the connector is different shape…
would be alright if I connect each coloured wires together and leave out extra ones ? easy ? or i'd better give it out to mechanic?

Search "JVC Mitsubishi wiring harness adapter" on eBay and pick up an adapter to plug your JVC stereo into a Mitsubishi wiring harness.
Yes, you can do it one wire at a time, but that'll take you all day and be very fiddly. And if you find out you missed one after it's all back together, you have to pull it out again.
There are a few different adapters for JVC depending on which model your new stereo is. If you drop into a repco, jbhifi or supercheap store they should have the correct adapters for you. You will need 2 of them, one will be JVC->ISO and the other will be ISO->Mitsubishi. They will cost about $15 each.
Or you could look up the pin outs of your car wiring harness and match the wires to your radio - the wire colours don't necessarily match - make sure you solder them and insulate with heat shrink not tape.
Don't forget to test the wire before you connect and make sure it does what you want.
Jut becuase the colour is the same don't mean the function will be the same. Check the wiring diagram for both your new model (should be in the box somewhere) and the one for try our vehicle (online).
Wiring harnesses are a good delay make it really easy, but sometimes don't have extra features. I bought one for my car, but since the head unit had reverse camera inputs, handbrake sensor for the video display etc, still had to do some connections myself.
Don't risk it - in my youth I melted many wires tucked in up behind dashboards which turned out to be very hard to repair.
Looms are now much more easily available
