Not much left of Darling Harbour now as it's undergoing a major redevelopment. I walked through a few days ago only the Chinese Garden left on the southern end. You should plan more time to the north of Darling Harbour which meets King Street Wharf and Barangaroo Reserve had opened recently.
Regarding overnight parking keep in mind that you are paying per single entry and exit and the price for Sat-Sun is the cheapest of the week in the Sydney CDB.
