Generally the first week of January can be an expensive time to fly after the Christmas peak.
But I did some searching for you now and I think you should try going via Bali with AirAsia and Cebu Pacific and could do it for about $750 excluding bags. Here is how I get $750: 11 Jan MEL>DPS $129; 8 hour layover at DPS airport; 12 Jan DPS>MNL $185; 30 Jan MNL>DPS $185; 4 hour layover at DPS airport; 30 Jan DPS>PER $250. Maybe also see if you can price beat AirAsia with Jetstar, it may even reduce the 8 hour layover on the flight there.
If you went via Bali probably consider travel insurance that will pay if there's another volcanic ash cloud.
Alternatively going via SIN with Jetstar is about $930 including bags for 12 Jan to 30 Jan.
Find someone on Gumtree selling their return AMEX flights. Should be able to get it for $400 or maybe less.
