I'm looking to buy an iPhone 6s and I read on a DSE deal that they accept WISH gift cards which we can get at a 5% discount from CashRewards. I notice that there is a place on their ordering page to enter in the card number and PIN.
My question is as to whether their site allows you to pay with /multiple/ gift cards. If this is possible, I ought to be able to secure a 5% discount on an iPhone 6s, right?

Multiple gift cards are accepted. Wish eGift cards do not work though. Instead you need to purchase physical Wish gift cards (alternatively physical Dick Smith gift cards) with the discounted eGift cards in-store, then use the physical gift cards to pay online.

Is there any risk in transferring eGift cards to physical cards? Is that allowed?
There's no risk transferring them to physical cards but the checkout operator who serves you might refuse to proceed with the transaction. Otherwise you could try do the conversion with the purchase of groceries in the same transaction.

I just bought 12*$100 gift cards and one $50 card from coles and applied it to an online order at dicksmith.com.au. Hopefully I get some of the stock they say is due to arrive on Tuesday.
It'll be even better if you can get 5% discount Coles eGift card to pay for the Dicksmith gift cards.
