I'm looking at buying a Lego Mindstorms EV3 Kit for my son's christmas present. I've seen that they've been on sale for $399 on a regular basis and as cheap as $350.
Can anyone recommend where I should keep an eye out?

$100 for Mindstorms EV3 would be an amazing price. Called a few BigW around Perth but none in stock anywhere.
I don't think any of the majors (KMart, BigW, Target, Myer, David Jones) stock Lego Mindstorms in Perth.Myer stocks mind storm EV3 as I bought mine from there last year. I also recently purchased one on behalf of my sister in law when they had 20% off Lego. This was at Garden City. If they don't have any on the shelf, ask staff as they have been helpful to me in the past and tracked down sets at other stores and arranged for it to be shipped to me. As it is over $100, it was free delivery.
$428 through ebay hobby warehouse. But like you keeping an eye out for sales for Christmas. Post here if you find anywhere.
I have heard that staff at Reserve Bank of Australia can get them at near wholesale cost through some staff programme. That probably doesn't help you directly, but perhaps you know someone (e.g via LinkedIn?)
I realise this is an old thread but I am also looking at getting a set this. Has anyone seen better prices lately?
BigW had them on clearance for $100, but very hard to find. Check any store you come across, and ask for them specifically.
Else 20% off is pretty common from most of the majors.
