I have Aux port which I can plug my Samsung Galaxy s5 quick and work all the time,
So does a device which I can connect my S5 via bluetooth and attach it to to my steering wheel so I can change music and volume?
All this things my Galaxy Watch can do so a device out there might be able too…

replace the stereo in the car with a bluetooth one and you will have controls on the stereo. It will be cheaper than adding gadgets, some headsets are pretty cheap now.

Agree that it would probably be illegal as it would either:
1) attach to the side, and get in the way as you turn the wheel and potentially causing an accident, or
2) attach to the centre, and gets to smash your face when the airbag goes off.
why not get the aux cable with control? only few $.
I think you'll find that such a thing is illegal, and for good reason. You should research a replacement steering wheel instead.
