I'm going to the snows soon for the first time in like a decade? and because I rarely go I don't feel the need to buy expensive gear that I may only use once in YEARS. So I don't know where you can actually buy snow gear especially cheap ones, does any one have any recommendations? I'm in Sydney btw.

Try Aldi, Some Aldi stores are still clearing stock (although you might miss on proper size). Aldi at Canberra was clearing stock on weekend.
if you're not going to go often, just rent? The only thing you must buy which can't be rented is gloves.
Amart Sports has lots of cheap snow gear and currently on sale. Haven't used any in the snow myself but seems like reasonable stuff for the price. I would assume Rebel Sport has similar gear.

Otherwise simply rent your equipment as others have suggested.
Kathmandhu has got a sale on now, with cheap goggles and gloves, accessories etc.

Aldi had their snow sale a couple of weeks ago and some stores may still have stock.
Otherwise I've had good luck at rebel sports outlet stores for cheap snow gear.
