I've lived on the Eastern edge of the Grampians (two paddocks from the boundary) for over ten years.
You're probably aware that non-designated camping spots (aka: 'bush')don't officially exist in the park. Having said that, one spot I like is on Redman's Rd about a click East of Borough Huts campground. If you're looking for spots for this Easter you'll be competing with many others for this spot.
The following locations are a bit more remote. Head down into the Victoria Valley and look around Moora Moora Reservior. The Mafeking area is an interesting place to explore.
Did I mention how awesome the Mitchell Plateau walk is? It's an overnight walk - carry everything in, carry everything out.
There's been little rain here of late so expect to see dry creek beds. Best to use a camp stove rather than risk a camp fire that turns into a 1000ha bushfire & evacuates Halls Gap. For God's sake take all your rubbish out with you and non-designated camp sites have no dunnys so you need to dig, dig, dig when you crap, crap, crap.
