I have 3000-4000 Thai Baht to convert back to AUD. This is about $120AUD. Should I try converting it at a bank (and if so, which bank) or at one of the currency exchanges in the city?

I'd probably hit up someone else on here or someone you know that's going and swap it at an agreed rate. At least one of you will be happy that way, maybe even both.
if its that little, id just hang on to the cash and save it for next time you go back to thailand or overseas and directly convert it then.
how much THB have you got and what do you want for it?
Whereabouts are you in Sydney?
This guide should allow you to exchange any surplus currency prior to departure http://www.1stopbangkok.com/hospitality/prostitutes_hookers
KVB Kunlun (http://www.kvbkunlun.com/en/html/contactus/contact_address_s…) tend to have the best exchange rates on Asian currencies. Although considering the small amount it's probably not going to make that much of a difference where you go.
