I plan on using it as a Linux server. So I would prefer something that can handle 8GB of RAM.

Why not a HP Microserver or a VPS (depending on your use)?
NUC is nice and small but has no capacity for redundancy for the drive for a media/backup server.
A VPS will be cheaper to "own"/run as a webserver.
Is the Microserver getting a bit long in the tooth, specs-wise or are they still very relevant?
I'm curious on this subject as well..
Pretty sure there are new models out now.
I would have said the HP Microserver would have fitted better because of the storage room….. (I own a nuc and a HP40L Microserver)
Or build your own with some cheap components or your old PC…

~$120 for a Bay Trail Atom with 32Gb (or more) Storage and 1-2Gb RAM
HDMI out and a couple of USB ports?
Not sure what you're looking to do with the NUC/Brix, but for HTPC, these little guys trump them.
