Because I've tried "oven directions" on food that can also be deep fried (like fish fingers, chips, spring rolls, calamari) before, and they always come out too dry. Fish fingers and calamari in particular, it's like the coating doesn't cook, inside is soggy unless you cook so long the outside burns, etc.
