China bar signature buffet for value and sheer choices. The rest can't compare.

I heard that the Hotel buffets at Grand Hyatt, and the Langham are very good.

What @extract said, however Pasesano imo isn't worth going at full price (the full price dinner equates with China Bar Signature whom have much bigger selection) you can find a lot of coupons for Paesano at deal sites like Groupon.

If you're looking for All You Can Eat sushi, try Gaijin Japanese Fusion in South Yarra.

There's a iffy buffet in Burwood East called Hollywood Buffet. The Urbanspoon scores rate it pretty badly, but I think it currently has as deal going and it's worth the deal. I don't think its as bad as everyone thinks - you get what you pay for (don't pay full price, not worth).

There's an All You Can Eat Korean bbq place in Holmesglen called Viking 92, quite well priced.
