What do folks here think of the 3 phones pitted against each other as I'm basically after a phone with a great camera & durability so as to survive those butter finger moments.

LOL, it is not. Especially with the much larger screens, they are easier to break.
Plastic bodies are best for absorbing impacts and therefore saving glass screens.
Out of those 3 phones, I'd go with the Note 3. The iphone 5S and Note 3 fair quite evenly with the each when it comes to the camera, so I'd assume it would be as least as good if not better then the iphone 5.
Have you thought about the Z1 Compact?
The Galaxy Note 3 is an excellent mobile, although the Note 4 will probably be announced within the next 3 or 4 months.
If you're after a great camera, also consider the Xperia Z2 which as a bonus also has water-resistance, so sorta adds to the "durability" you mention.
Did you consider a nokia phone as well? Disregarding the OS criticisms, the OS is still usable.
The lumia 1020 has a 41MP camera, whilst i always say don't bother with phone cameras (this is a personally opinion), the lumia 1020 seems pretty damn good.
Also, i don't know about the current build quality, but i've dropped my 5110s and 3220s and things like that in the past and they still work. Maybe the current build quality is still the same?
