I can do it manually, but every time I close Outlook, my name goes back in when I log in again. I'd like to be anonymous. Anyone have any experience on this please?
Have Outlook 2013 and wish to take my name off ALL outgoing emails

You're never going to be anonymous, they will always at least see the sending email address.
The only reason u would want to send anonymous emails is to do something nefarious, thus I suggest people don't help you!

A) be using Outlook
B) use what seems to be your main email address for things where you don't want people to know who to are.you do know your IP address will be in the email header from all email you send for your computer?
If you want to send anonymous emails (generally known as spam, or possibly for trolling reasons ) sign up for a hotmail/yahoo/gmail.You could also use a nickname in the From section. such as Hackerz Anonymous. Then nobody will dare try and find out who you are
You may have a corrupt Outlook profile. You could try closing Outlook then going into Control Panel / Mail and creating a new one. Set it all up from scratch. Change the new profile to the default when starting Outlook then click OK.
Start Outlook again.
If you can't see the Mail icon in control panel, change the view to "Small icons"
