We've just returned from Japan and Thailand with a considerable amount of foreign currency left over. What would be the best way of converting it back to AU$? We basically want to put it straight back into our savings account.

well this might not be the easiest but this is what i have done.
started a HSBC foreign currency account
signed up with ozforexso what you could do is deposit it into the foreign currency account at a branch and then call ozforex and let them know where you want to change it from to aud. i saved a few bips doing this.
I had so many regrets with currency exchange that I always try to change it back before I end up in any rich country (like Australia).
If it's a huge amount maybe you can wait for some interesting hacks.
Otherwise, if you live in Sydney or Melbourne I keep seeing KVB Kunlun pop up in Whirlpool and other forums (e.g. Sydney. http://www.kvbkunlun.com/en/html/contactus/Contact_address_s…). I have to change money myself but since I no longer work in the city it'll have to be more than a $20 improvement to get me really interested (so percentage-wise you'd want to be changing enough to make it worth it).
Wait until next year and profit after the Aussie Dollar has crashed!

Sooo…. out of the banks / post office / Travelex which is the best to convert money back?
Best way is to find someone going to Japan or Thailand and sell them the money. Can be a little risky though.
