Valentines flowers increase date?

Does anyone know when florists increase their flowers? Because I remember a few times I have tried buying them before due date, 2-3 days and prices seem to have increments until it hits the day.
Buying fresh flowers on Monday makes more sense than on Friday if they are going to be the same batch, why pay double if avoidable?

    My mum used to own a florist and I used to go with her to the markets, during the week before valentines day the markets don't sell roses or only fewer places sell them for quiet a bit more usually 1.5 x more than usual but within 2-3 days of valentines prices sky rocket and there's huge amounts of stock available.
    Assuming you buy flower on Monday it'll most likely be from the old batch or about to bloom
    IMO I think buying it on the day would be the same/close to buying it a few days earlier it just gets you out of the busy mess nothing more really

    You've got no way of knowing that though. From memory, it is 5 to 7 days beforehand that the wholesalers put their prices up. I guess they just want their slice of the pie too.
