Knives for home use

Hi,

I was looking at knive blockset etc on boxing day. Its so confusing though.

All I want is 2 knives. 1 big one and 1 small one.

I am happy to spend $100 or even more for something that is good quality and will last a while.

Can someone please recommend or give advise on it.

  • As someone who's done a lot of research into knives recently, i can tell you with confidence that you DO NOT need a full blockset with heaps of knives. The main three knives that each good chef needs is a chef's knife, a utility/paring knife and ideally a bread knife as well. Don't cheap out on these since good knives will last you a lifetime. Wusthof and Global have really good reputations and are not that expensive either if you get a good deal online. Check out ebay for knives shipped from the US since i've picked up a few bargains from there on Wusthof knives

  • Good question - I'm also after a great 3 or 4 knives as Hot Chocolate says and something to store them on or in. Any recommendations gladly appreciated. Thanks!

  • Global is all I use. Also invest in a good sharpener, stay well clear of these ones that will sharpen a credit card you see on late night tv. They WRECK knives.

  • I had the same dilemma earlier this year … had a crappy stainless steel full block from Harris Scarfe as my first move-into-home set. I Kept the block and bought two Japanese knives, Tojiro DP which are their base range.

    Extremely good value, top quality Japanese hard steel. Thinner than European branded knives for finer slicing.

    I bought two knives : 210mm Chef and 150mm utility for $US118 shipped from good ol' Jeremy at Chubo Knives www.chuboknives.com

    My friend got a new Wusthof set, and they last forever too. I don't like the heaviness, so went with Japanese.
