HD 7870 is only $230 or so, but some people prefer Nvidia for a few reasons (e.g.: PhysX or better stereo 3D support).

I want only one but unsure if it can handle my 2560 x 1440 monitor with BF3 and upcoming of BF4?
Benches indicate 44.6 FPS, which I think is a bit out of the card's league. Playable, but not an optimum framerate for FPS.
If you were to use both in SLI it won't be an issue then.

Keep in mind you won't need AA at that res. If you want 60 fps, you can just turn something from "Super Ultra" back down to "very very high".

Just as a point of reference, I have the 2010-equivalent of SLI'ed 760's (2x GTX 460 1GB) and they still handle most games @ 1920x1080 very well. For instance in the Arma 3 Beta I get 40-60FPS @ High settings/2x AA/4x AF. In BF3 I get a solid 60FPS @ Very High/High settings with 2x AA/8x AF/HBAO. Given that a GTX 760 is a damn sight more powerful than a GTX 460 (http://www.hwcompare.com/14837/geforce-gtx-460-vs-geforce-gt…), these should be more than enough to max out anything @ 1920x1080.
Just be aware that your mileage with a multi-GPU rig will vary depending on the games you play as not all developers properly optimise their titles for multi-GPU configurations.
Also be aware additional PSU wattage and cooling are something to consider with a multi-GPU setup.
