you prefer carnaroli over vialone nano?
Haven't seen vialone nano for sale before even though I've read about it, so I haven't tried it before. Where do you buy it from?
I do prefer carnaroli over arborio, it seems to retain a bit more firmness. Costs about $5-7/kg though. :(probably same places as those that have carnaroli - good/italian delis/supermarkets such as boccaccio and leo's

I'll look out for vialone nano in Sydney. I usually get my carnaroli from this online store, but it's only worth it when I have a big order because delivery is about $9. Slightly off-topic, but their dried porcini is top quality - huge pieces, full of flavour, unlike those pitiful broken pieces you get in 5g packs amongst the packet dried herbs at the grocers'.
The other place I got some carnaroli when I travelled to Melbourne and visited Lygon St, a bit cheaper at $5/kg.

Great price for arborio. I wish carnaroli was this cheap and readily available!
