From what I could gather after a quick look at the HTC 8S deal posts, you can spend around $5 on an unlock code and hey presto, you have an unlocked phone. Is that correct? It seems too easy- what's the catch?

It's that easy. The only thing you need to be aware of is that not all Telstra phones work on other networks.
So check the specs of the phone your thinking of unlocking beforehand.

Also not all phones can be unlocked easily so make sure you have a reliable source to unlock the phone, check the ozbargain or whirlpool forums for advice.
Some phone companies e.g. Vodafone will let you unlock some phones for free so shop around.
